Fruits - Nuts Dreams

This nut dreams are realy very simple to make,the taste is extremely heaven.



All you Need:

Mixed Nuts(almond,walnut,pistachio nut) - 1/2 cup
Packed Brown sugar - 1/3cup
Cream cheese softened - 4oz to 5oz
mixed fresh or frozen fruits - 1cup
Refrigerated large buttermilk flaky biscuits - 1pkd(16.3oz)
Flaked coconut - 1/3 cup

Directions:

Heat oven to 350 deg F.Lightly spray 16 regular -size muffin cups with cooking spray.In food processor,process nuts with on and off motions until coarsely chopped.Add brown sugar;process until combined.place in small bowl,set aside.

If u are using the frozen fruits thawed as directed on bag,drained and reserve the liquid.In a same food processor,process cream cheese,2 tbsp nut mixture and 2tbsp fresh fruits or reserved liquid and 1tbsp of frozen fruit until smooth.

Separete dough into 8biscuits;cut each biscuit into 2 biscuits in the middle of the biscuit,making a total of 16 biscuits.lightly press each biscuit in bottom and up side of muffin cup.spoon about 1/2 tbsp cream cheese mixture into eash dough-lined cup.Top each evenly with mixed fruits,remaing nut mixture and 1tsp of coconut.

Bake 15 to 21 mins or until coconut is lightly browned.Cool in pan,serve warm or chill.

Jackfruit Yogurt Panna Cotta with Strawberry Coulis

When i saw this recipe at sig site something is forced me to give a try..The recipe is turned out well.Here is the mouthwatering jackfruit panncotta.


Ingredients:
For jackfruit puree:
Jackfruit in syrup - 1 20 oz can
sugar - 2tbsp
water - 1/2cup

Pannacotta:
Heavy cream - 250ml
vanilla yogurt - 200ml
sugar -1/2cup
cardoman powder - 1/4tsp
vanilla essence - 2drops
unflavored gelatin - 1tbsp

Strawberry coulis:
strawberrys - 1/4cup
Lime juice - 2tbsp
sugar - 1tbsp
water or milk - 1/4cup

Method:

Jackfruit puree:
Drain the water from jackfruit cut into small pieces ,cook jackfruit with water and suger til jackfruit gets soft,tranfer into plate let it cool for sometime then grind it to finepaste.

Pannacotta:
Prepare gelatin as per the instruction given in the pocket.
In a same saucepan add cream,vanilla essence,cardoman bring to boil and simmer it to 10-15 mins on low heat.Add softend gelatin to the cream mixture and stir it till gelatin dissolved.
Meanwhile in a bowl mix jackfruit puree,yogurt and sugar,whisk it to till form a smooth mixture.
Add jackfruit mixture into cream mixture,beat well to combine then Pour into ramekins or dessert molds. Chill in the refrigerator for at least three hours or till set.

Stramberry coulis:
Blend all the ingredients in a blender till smooth and Chill and serve.

Serve:
In plate pour chilled strawberry coulis , place the pannacotta over the coulis and decorate with some sliced strawberrys and jackfruits.

Cocount - Chocolate Macaroons

Very simple dessert made from coconut and chocolate chips. Thanks alamelu for this very simple and wonderful recipe.



Ingretients:

3/4 cup - sugar
21/2 cup - unsweetend sherdded cocount
2 - large egg whites
1tsp - vanilla extract
1/2 cup - semisweet chocolate chunks

Method:

1. In a bowl Beat egg whites well with sugar.

2.Add all other ingredients into it and mix it very well.

3.Place small mounds (about 1 tablespoon) of the dough on the baking sheet, spacing one inch apart. Bake for about 15 or until the macaroons are shiny. Remove from oven and let cool on the baking sheet for about 10 minutes and place it a wire to cool.

4.Serve it with coffee or tea.

Chocolate Walnut Brownies



Ingredients:

½ cup - Melted butter (or 1 stick)
¾ cup - White granulated sugar
¾ cup - Light brown sugar
2 nos - Eggs
½ tbsp - Vanilla extract
¾ cup - All-purpose flour
½ cup - Unsweetened cocoa powder
½ tsp - Salt
½ cup - Semi sweet chocolate chips
½ cup - Milk chocolate morsels
20 nos - Walnuts

Directions:

Preheat oven to 350F, get the middle rack set on the oven grease an baking pan or line with parchment paper on the bottom. Chop the walnuts coarsely and keep aside.

Sift together all-purpose, salt and cocoa powder and keep aside. Combine melted butter, white sugar, brown sugar and vanilla extract. Beat until light and fluffy (low speed using electric hand mixer), adding eggs one at a time. Gradually add the flour and cocoa mixture and mix gently until it forms a thick gooey paste (do not beat at this stage).

Fold in the semi sweet chocolate chips, milk chocolate morsels and chopped nuts. Spread the batter evenly in the prepared dish and bake for 35 minutes or until an inserted toothpick in the center of the dish, comes out clean. Place pan on wire rack, cool for 10 minutes and run a very thin sharp knife around outside edge of brownie to loosen from side of pan, gently remove the brownie slab along with the parachment paper and cool again for 20 minutes. Don't try to cut brownies when warm, it may go shapeless. When cooled completely cut them into small squares.
