Cream of Broccoli Soup

Broccoli reigns the vegetable kingdom with its high nutritional value.It is rich in Vitamin A,Vitamin C,fiber,folic acid,iron,magnesium,zinc,thiamin,riboflavin etc etc.The dark colored florets contain more beta carotene and Vitamin C than those with the lighter ones.And also am so lucky b'cuz my hubby and little one like to eat broccoli.This is my daugter favorite soup.

Ingredients:-
Broccoli chopped very fine -1 cup
oil or butter - 1 tbsp
onion chopped - 1 tbsp
Garlic chopped - 1/2 tsp
Fat Free cheese - 3tbsp(i use kraft)
Milk - 2 cups ( I use skim milk)
Salt & Pepper - to taste
Method:-
Heat small amt of butter in a pan,add broccoli saute it for 2mins then transfer it into a plate let it cool for 5mins,now put into the blender give 6 to 7 pulse (this step will help to make the broccoli very tiny piecs). Now heat remaing butterin a pan, add onion and garlic and saute till translucent.Add broccoli and saute for a 30sec.Now pour in the milk and keep stir it to avoid burning the milk.Boil for next 10mins.Don’t forget to stir in between.Add salt & pepper to taste.Finally add grated cheese stir it for 1min switch off,serve warm.

(Note:If you don't like cheese you can add lightly sauted all purpose flour for thicking the soup)

Carrot - Tomato Soup

Soups are one of the healthy and very easy to make food.After my daughter 1st b'day i have been making soup atleast three times in a week,that is only way i have feed sum vegetables to her.Carrot and tomato soup my favorite too.


You Need:

Grated carrot - 2 cup
chopped tomatos - 1/4cup
garlic - 1clove
Finely chopped onion - 3tbsp
corn flour - 1tsp
salt and pepper - as you need
Butter or oil - 2tsp
courtons - 1/4cup
Chopped coriander

Method:

In a big pan add carrot and tomatos with 2cup of water ,bring it to boil (just 2mins is enough)then swich off,let it cool completely then blend in a blender to a smooth paste,starin it thru seive.
In a small bowl mix corn flour with 3tbsp of water.

In a pan add oil saute onion and minced garlic,transfer the carrotntomato puree into a pan bring it to boil, now add cornflour into it then cook for 5mins now add cheese,salt,chopped coriander,and pepper .Serve hot with courtons.

Drumstick Soup



You Need:
Drumstick - 4cups(Cut 2" piece)
Tomato - 1
Ginger - 1/2 inch piece
Small onion - 1
Garlic - 4cloves
Salt - as needed
Greeb chilli - 2
Coriander - 1/2cup
Mint - 1/4 cup
Lemon juice - 1tsp
1 tsp - corn flour

Method:

Pressure cook Drumstick,tomato,Ginger,mint,And greenchilli till it becomes very very soft.

Place the colander in a bigbowl ,drain the water from pressure cooked vegetables then mash the vegetables with big spoon or spatula ,fially add 1/2cup of water in the colander mash it once again ,keep the fillterd water aside.
Heat butter or oil in a pan add chopped garlic and onion saute it till brown,add the drumstick water into it with choped coriander leaves,bring it to boil .In a small bowl mix the corn flour with 2tsp of water add this mixture in to pan,simmer for another 5mis add lemon juice swich off the stove.
