Onion Pakora

Onion pakora is a appitizer made with onion and chickpea flour.For a change i've tried the same with corn flour.It turned out very well.


You Need:

Yellow corn flour - 1cup
Big onion - 2
Chilli powder - 1tsp
Grated Ginger - 1tsp
Parsley - 1punch(optional)
Coriander leaves - 1punch
Curry leaves - 1/2 cup
Green chilli - 2
Baking soda - 2 pinch
salt - as you need
Oil - For fry

Method:

Chop the green chillis,coriander leaves,curry leaves and parsley,slice the onions into lenthwise.In a big bowl mix cornflour,chilli powder,ginger,baking soda and salt. Add all chopped produce into it ,mix well then sprinkle some water(the mix should not turn into dough,and also not fully wet batter)for getting the enough moisture.

Haet oil in a pan for deep fry(it should be very hot otherwise the batter will drink oil),take a small amount drop it into oil if it's poping up over the oil then start to fry.use ladle to turn the pakora,reduce the heat into medium after u drop the batter into oil,once it turn brown colour remove them onto absorbent paper.Serve it warm and store in airtight container for upto a week.

Carrot Cake

I have been thinking to upload this recipe as my first post(but i cud't )...Now it's time to post my family favorite cake.it's nothing other than carrot cake....it's very simple and tasty recipe.



You Need:

All purpose flour - 1cup
Baking soda - 1tsp
Baking powder - 1/2tsp
sugar - 3/4cup
cinnamon pdr - 1tsp
vannilla extract - 1tsp
grated carrot - 1 and 1/2 cup
egg- 2
vegetable oil - 3/4cup
Salt - 1/4tsp
Chopped nuts and raisins - 1/2cup

For Frost:

1pkt of cream cheese(room temp)
unsalted butter - 1stick(room temp)
powdered sugar - 1cup
chopped Nuts - 1/2cup
Vanilla extract - 1tsp

DIRECTIONS:

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a cake pan.

In a large bowl, mix the flour with cinnamon,sugar,baking powder ,baking soda,salt and nuts.Add vanilla extact then add egg one at a time beat slightly,add carrot beat it again at low speed or hand.Add vegetable oil beat the mixture once again for 1min,pour the mixture into prepared pan.

Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely(it will take atleast 1hr to get cool the cake completely).

To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the completely cooled cake(otherwise frosting will start to melt ).

Jackfruit banana Nut cake.

I found this original recipe from mahanadi and this seems very innovative and interesting to me.So that i've tried with my favorite nuts and flavors



Ingredients:

All purpose flour - 1cup
Banana - 1cup
Jackfruit chopped finely - 1cup
Chopped nuts - 1cup(raisins,almond,cashews)
baking soda - 1tsp
baking powder - 1tsp
2tbsp - melted butter
warm milk - 1cup
cinnamon powder - 1tsp
sugar -1/4cup

Method:

Mix well all the dry ingredients and jackfruit in a big bowl,add mashed banana into the mixture .

Add meldted butter and warm milk to the flour mixture combine everything thorouly.

Pour the cake mixture to the greased pan and bake at 425F for 35mins or untill the inserted tooth pick into the cake come out clean.

Cool it to room temp,serve it warm.

Spinach Vada

I know lot of kids hate to eat spinach..so that i have started to make it for my kid.



Ingredients:

Ginger 1' piece
salt -1/2tsp
Finely chopped spinch -1cup
1cup -urad dal
green chilli -1
onion medium size -1
Rice flour - 2tbsp
coriander leaves - 1/4 cup

Directions:

Grind the uraddal ,salt,ginger and greenchilli into fine paste with some drops of water. Mix all other things with grindedpaste. Head oil with medium flame.

Get moisture ur hand with 2drops of water,make medium size balls. keep it ur palm hand then flat the ball make hole in mid of the circle.



fry it on oil till crispy. serve warm with cocount chutney.

BananaNut Cake

This is my first post to start this blog phase.As traditionally i want to start my blog with some sweet.so here is my banana cake recipe.



Ingredients:

3 Ripe bananas
1tsp baking powder
1tsp baking soda
3/4 cup sugar
1 n 1/2 cup all purpose flour
1qtr butter stick
chopped nuts(i've used cashew,almond and walnut)
1/4tsp salt
1 egg
1tsp vanilla

Direction:

Mash the bananas very well.

Mix all dry ingredients in a big bowl all purpose flour,baking soda,baking powder,butter,chopped nuts,salt,sugar.

Then add mashed bananas,vanilla and egg.mix it all very well.

Grease the cake pan with oil and tsp of flour.

Pour the mix into the baking pan and bake it for 25 to 30 mins or inserted tooth pick should come out clean.

Serve it warm .
