Onion Pakora

Onion pakora is a appitizer made with onion and chickpea flour. For a change i've tried the same with corn flour. It turned out very well.

You Need:

Yellow corn flour - 1cup
Big onion - 2
Chilli powder - 1tsp
Grated Ginger - 1tsp
Parsley - 1punch(optional)
Coriander leaves - 1punch
Curry leaves - 1/2 cup
Green chilli - 2
Baking soda - 2 pinch
salt - as you need
Oil - For fry

Method:

Chop the green chillis, coriander leaves, curry leaves and parsley, slice the onions into lenthwise. In a big bowl mix cornflour, chilli powder, ginger, baking soda and salt. Add all chopped produce into it ,mix well then sprinkle some water(the mix should not turn into dough, and also not fully wet batter)for getting the enough moisture.

Haet oil in a pan for deep fry(it should be very hot otherwise the batter will drink oil),take a small amount drop it into oil if it's poping up over the oil then start to fry.use ladle to turn the pakora, reduce the heat into medium after u drop the batter into oil, once it turn brown colour remove them onto absorbent paper.Serve it warm and store in airtight container for upto a week.
